Our quarter beef purchasing has changed slightly (and for the better!). Instead of basing it off the hot carcass weight at $7.50/lb, we have made quarter beef purchases a lump sum amount of $1,099, while still offering the same cuts of everything.
 
Those cuts would include:
4 Prime Rib Steaks  (Ribeyes) OR 1 Prime Rib Steak & 1 3-Rib Roast
2 Chuck Steaks
1 Chuck Roast (Pot Roasts)
3 T Bone Steaks & 2 Porterhouse Steaks OR 3 NY Strips & 2 Filet Mignon
4 Sirloin Steaks
2 Sirloin Tip Steaks
2 packs Short Ribs (English style)
5 Packs Stew Meat
1 Skirt Steak OR 1 Flank Steak
2 Roast Beef (rolled & tied)
1 London Broil
1 Flat Iron Steak
2 packs Marrow Bones
1 Flap Meat/Bavette Steak
1 pack Suet
6 Beef Shanks (Osso Buco)
2 packs Sandwich Steaks
15 packs of 1-lb Ground Beef
3 packs of Burger Patties (4 patties/pack)
4 Packs Hot Dogs (8 links/pack)
2 Packs Bratwurst (4 links/pack)
2 Packs Smoked Kielbasa Sausage
 
This lump sum price discounts our retail prices by $250 (about 25% off retail). A quarter beef includes about 75 lbs of meat that is cryo-packed just like the meats in our store, and would take up about 3 cubic feet in your freezer. 
 
We are usually able to fulfill a quarter beef purchase immediately. After your $99 deposit to be added to the waitlist,  the remaining $1,000 balance will be due at time of pickup by cash or check.
